Doggie Birthday Cake for Tea Maria
Today is our dog’s 6th birthday, and boy did this spoiled diva get a treat!
We’ve had Tea (pronounced tay-a) since she was two, and every year I buy her a birthday cookie or bone. I recently stumbled upon this recipe from Better with Butter, and figured I’d go all out and bake a cake.
This recipe is pretty easy, and you probably have most of the ingredients on hand. I had some leftover wheat flour in the cupboard (GASP!!) so I used that for her cake, but you could use just about any flour in this recipe and it would work fine.
Some of Tea’s favorite things (in no particular order): Food, squirrels, the smell of Dunkin Donuts iced coffee, food, burying her face under the covers, running 4-8 miles with Joe or I, food, coercing the neighbors dogs into stealing trash with her, her Patriot’s fleece blanket, getting her ears rubbed first thing in the morning and last (but not least)…..FOOD.
Ingredients:
- 1 cup flour (gluten-free, preferably)
- 1 egg
- 1/3 cup peanut butter (natural, lower-sugar varieties are better)
- 2/3 cup pure pumpkin puree (NOT pumpkin-pie mix as that has sugar and other ingredients in it)
- 1/2 teaspoon baking soda
- 1/3 cup vegetable oil
- 1/2 cup water
For the frosting:
- 2 tablespoons cream cheese
- 2/3 cup pumpkin puree
Mix all cake ingredients. Bake in a small, greased and floured pan (I used two mini springform cake pans) at 350 degrees for about 15 to 20 minutes or until a toothpick comes out clean. Let cool.
Meanwhile, mix frosting ingredients. Frost when cake is completely cool. Decorate it and serve it up (please watch your hands and feet or your dog miiiiight devour them accidentally).
